Sweet succulent roast pig is a favorite among locals on the island. Lechón is a Spanish word referring to a roasted baby piglet that was still fed by suckling its mother’s milk. It takes several hours to cook the suckling to perfection. It has to be a little crisp on the outside and juicy on the inside.
