Kimba Kabaka – Our Vegetarian Culinary Alchemist

When talking vegan on St. Croix, let’s talk to the master. Kimba Kabaka – an extremely multi-talented, humble individual with lots of knowledge, skill, and experience to back him up. It takes knowledge, skill, and technique to perfect visual appeal, texture, and flavor combined to transform vegetarian cuisine into a tasty work of art.  Kimba has been a chef for 20 years and owned his brand for 17 years. After attending culinary school, he opened a cafe in California, but after being business for a while, he wanted to simplify his life and returned home to recreate what he did in the states. His cafe “Roots N Kulchah” has a very crucian culture vibe. The cafe is decorated with vibrant colors and artistic pieces that give it that island, Caribbean feel.

Don’t say you are a vegan, but only eat fish or chicken. Kimba wants everyone to know “that’s not vegan”. As long as a dish has meat, it’s not vegan. He has a popular dish called “Vegan Saltfish”. It’s made from the hearts of palm and seaweed that gives it that tasty seafood flavor. This is just one of the many delicious dishes the cafe has to offer.

 

In addition to being a creative chef, Kimba also creates wooden bowls and cups with whole pieces of wood and turns them into works of art. It takes him a couple of days to complete one of his masterpieces. In addition, he also creates platers and tables.

In the future, Kimba plans to hire people that can learn and carry on his recipes for creating fantastic vegan dishes. So the next time you feel the urge for something clean and healthy, stop by Roots N Kulchah Cafe for a tasty experience you will not forget.
